Healthy Brekkie Greens

This fresh and tasty breakfast plate is loaded with carotenoids, which are found in the macular of the eye.
Broccoli and our leafy greens are rich in vitamin C, E and plant based Vitamin A, which is important for good vision. A deficiency in these essential vitamins can lead to serious eye conditions.
The zinc in the egg yolk, will help your body absorb the zeaxanthin and lutein from the egg and veggies. Zeaxanthin and lutein are important in maintaining good eye health including the macula.
Ingredients
Serves 1 1 tbsp extra virgin olive oil 1/2 bunch broccolini 3 stalks asparagus 2-3 stalks kale 1 tbsp chopped mint 1 tbsp dill 1 lemon 2 tbsp chopped walnuts Salt and pepper Chilli flakes 2 eggs 1-2 slices sourdoughMethod
1. Heat fry pan to medium-high with extra virgin olive oil. Add broccolini and asparagus to pan and cook tossing occasionally for 2 minutes or until they begin to brown slightly. 2. Add roughly chopped kale to the pan with a dash of water and toss until just cooked. 3. Remove from heat and toss through herbs and squeeze of lemon juice.
4. Meanwhile poach eggs in a pot of gently simmering water for 6 minutes or until cooked to liking. 5. Place greens on toasted sourdough with poached egg and season with salt, pepper, chilli flakes and extra lemon juice. Top with chopped walnuts. 6. Serve! *Recipe may contain eggs, nuts and dairy.
