Healthy Warm Lentil and Salmon Salad Bowl

This delicious Warm Lentil and Salmon Salad Bowl helps promote good eye health with some tasty, carefully chosen ingredients.


Salmon is rich in Omega 3 fatty acids which can help prevent macular degeneration, glaucoma and even dry eyes. The lentils contain low GI carbohydrates. A healthy diet and regular exercise can help reduce the likelihood of developing serious eye conditions. The high zinc content helps your eyes produce melanin and is important in maintaining good eye health.

The orange that gives this dish it’s fresh, zesty flavour is full of vitamin C. Vitamin C may help in maintaining healthy blood vessels in your eyes and should be part of a balanced diet.

Ingredients
150g hot smoked salmon fillet
1 tbsp extra virgin olive oil
2 cloves of garlic
1 bunch Swiss or rainbow chard or silverbeet
1 x 400g tin brown lentils
1 orange
Dill
Salt and pepper

Dressing:
2 tbsp extra virgin olive oil
2 tbsp fresh orange juice
1 tsp honey
1 tbsp wholegrain mustard
1 tbsp apple cider vinegar
1/4 tsp garlic powder




Ingredients

Method

1. Make the dressing by combining all ingredients in a jar and shake well to combine. Set aside.

2. Place salmon on a lined baking tray in an oven preheated to 180 degrees celsius and bake for 10 mins or until just warmed through.

3. Heat a skillet on the stove top with a drizzle of extra virgin olive oil. Add the sliced garlic and fry for 1 minute. Add the chard or silverbeet to the pan and cook for 3-4 minutes or until vibrant green and cooked through.

4. Drain and rinse canned lentils. Run boiling water over the lentils to gently warm them.

5. Place lentils, chard and salmon in a bowl. Top with orange dressing and orange slices. Season with salt and pepper if required and fresh dill.

6. Serve!
